How To Cook Broccoli Soup With Spinach, Potatoes And Garlic - Recipe

Required products :

  • 1.5 liters of vegetable or chicken broth
  • about 800 grams of broccoli
  • 100 grams of baby spinach
  • 4 medium-sized potatoes
  • 1 stalk of leek (white and light green parts only)
  • 3 cloves garlic
  • 5 sprigs of thyme
  • 1 bay leaf
  • olive oil
  • pinch of chili pepper flakes
  • 6 eggs
  • 2 tablespoons vinegar
  • 6-8 sprigs of dill
  • pepper
  • left

 

Method of preparation :

Finely chop the leeks, peel the potatoes and turn into small cubes, saturate the garlic, divide the broccoli into "bouquets".

Heat olive oil in a saucepan, fry leeks in it until soft with a pinch of salt (5-7 minutes). Add the chili flakes, garlic, potatoes and stir.

Pour the selected broth and bring the soup to a boil. Then put the broccoli, thyme, bay leaf and cook for 10-15 minutes (until the potatoes are ready).

Then remove the bay leaf and puree the soup in a blender. Season to taste, remove the pan from the heat and put the spinach in the dish. Close the container with a lid and wait 3 minutes (during this time the leaves will soften), stir.

Pour water into a fireproof glass and add a little vinegar. Beat one egg and place in the microwave for a few minutes (until the yolk acquires your preferred hardness). Do the same with the other five eggs.

Divide the soup into deep plates or bowls, put one egg per serving and serve.
