How To Cook Broccoli Soup With Yellow Cheese (Cannibal Eye Soup For Halloween) - Recipe

On the eve of Halloween we offer you a cannibal soup with eyes. Although it looks awful, which is actually the idea, it is very tasty and if you manage to overcome its appearance, you will be satisfied with the combination of broccoli and yellow cheese.

 

Required products :

  • about 1 pound of broccoli
  • 50 grams of butter
  • 1 large onion
  • 1 clove garlic
  • 1 cube vegetable broth
  • 200 grams of yellow cheese (or hard Emmental cheese)
  • 6 hard boiled eggs
  • 6 pitted black olives
  • grated nutmeg
  • pepper
  • left

 

Method of preparation :

Wash the broccoli and cut them (leave a few whole inflorescences).

Melt 1/3 of the butter in a suitable bowl, add the finely chopped onion and garlic clove, add salt, nutmeg and pepper to taste. A minute later, pour the broccoli into the bowl and let it cook for 5 minutes.

Dissolve the broth in water, heat it and pour over the vegetables. Allow everything to simmer for about 20 minutes under a lid (broccoli should soften and the liquid should evaporate almost completely). Remove the pan from the heat, add the grated yellow cheese to the soup and beat with a blender until smooth.

Divide the broccoli inflorescences into pieces, pour boiling water over them and cook for 3 minutes. Then drain the liquid and rinse them with cold water.

Before serving the soup, heat it over low heat and add the cooked broccoli and the remaining butter.

From the boiled eggs and olives form "eyes".

Distribute the soup in suitable bowls, put their eyes and serve. You can also use wide deep plates, then you will be able to put both eyes in one place.
