Required products :

  • 4 tea cups chopped broccoli
  • 2 cloves garlic, finely chopped
  • 1 tablespoon olive oil
  • 1 can of 400 grams of artichokes, drained and chopped
  • 2 green onions
  • 1 shallot, finely chopped
  • 1 teaspoon tarragon, chopped
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/2 cup skim yogurt
  • 1/4 tea cup grated Parmesan cheese

Method of preparation :

 

Put the broccoli roses in a large pan and pour olive oil over them. Sprinkle with black pepper and salt. Bake for 10-15 minutes at 200 degrees until the vegetables are golden brown.

Meanwhile, in a large bowl, combine the artichokes, green onions and shallots. Add the broccoli, season with tarragon, cumin, paprika and stir. Finally add the yogurt and parmesan. Add salt and garnish with a few parsley leaves, if desired.

The dish can be consumed as a salad and as a pate for spreading on slices and crackers.
