Necessary products:
about 800 grams of fresh broccoli
3 raw egg yolks
100 grams of butter
1 tbsp lemon juice

1 tbsp capers

Method of preparation:
Put the butter (cut into pieces) in a small bowl and add the yolks and water. Then leave in a water bath until a homogeneous mixture is obtained, stirring constantly. Remove from the heat, add the lemon juice, salt, capers, mustard and stir.
