Required products :

  • 1/2 cup white crystal sugar
  • 1/2 teaspoon brown sugar
  • 2/3 teaspoon butter
  • 1/4 tea cup of water
  • 180 grams of dark chocolate
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1 1/2 teaspoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

for the caramel-coconut layer:

  • 1/4 tea cup melted butter
  • 1 cup brown sugar
  • 2 teaspoons coconut
  • 1 teaspoon crushed pecans
  • 1/4 tea cup corn syrup
  • 1/4 teaspoon cream
  • 1 teaspoon vanilla extract (or liquid vanilla)

Method of preparation :

Prepare the baking dish - a rectangular pan measuring 33 by 22 centimeters, which you spread and sprinkle with flour.

Put the first three ingredients in a saucepan - butter, both types of sugar and water. When the mixture boils, remove from the heat and put the crushed chocolate inside to melt, stirring. Add 2 tablespoons of vanilla and eggs, mix well to combine ingredients.

You should add flour, baking powder and salt. Pour the resulting dough into the pan and bake for 30-40 minutes until done.

Prepare the coconut caramel topping. Grate coconut (or use coconut shavings), mix it with a quarter teaspoon of melted butter, 1 cup of brown sugar, pecans, corn syrup, cream and vanilla. Stir the mixture well to combine the products and pour over the hot cake to cover the surface well.

Return to the oven to bake for 2-3 minutes on the upper rack only, until the filling begins to form bubbles and caramelize. Be careful not to burn out, no more than a few minutes are enough.

Allow the cake to cool completely before slicing.
