Required products :

  • 1 ciabatta, cut into slices
  • 2 tablespoons olive oil + more for watering
  • 2 thinly sliced ​​garlic cloves
  • finely chopped lemon peel
  • 2 cans of 400 grams of beans, drained
  • 100 milliliters of chicken broth

for dressing:

  • 2 tea cups parsley, finely chopped
  • 1 teaspoon chopped mint leaves
  • 1 shallot, finely chopped
  • 1/2 teaspoon olive oil
  • 1/3 tea cup of lemon juice
  • 6 anchovy fillets, finely chopped
  • 2 tablespoons capers

Method of preparation :

Prepare the dressing by mixing all the products for it. Season with salt and pepper and leave for at least 30 minutes before serving, to combine the flavors.

Meanwhile, bake the bread slices, smearing them with olive oil and seasoning with salt. Bake at 190 degrees for 10-12 minutes until golden and crispy.

Heat olive oil and fry the garlic and lemon peel in it for 2-3 minutes until the pieces of cloves soften, but should not change color.

Add beans, broth and season. Cook for 3-4 minutes. Remove from the heat and mash with a potato press or fork. Cool.

Serve the bruschettas with bean puree and green parsley dressing on them.
