How To Cook Bruschetta With Goat Cheese Bean Paste - Recipe

Learn how to cook "Bruschetta with goat cheese pate from beans". Delicious recipe.

Required products :

  • 450 grams of beans (grains only)
  • 3 cloves garlic
  • 1 lemon - its peel and juice
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons olive oil
  • 250 grams of goat cheese
  • 5 thin slices of prosciutto if desired
  • toast

Method of preparation :

Blanch the beans in hot water for about 8 minutes, then transfer to ice cold.

Meanwhile, grind 2 cloves of garlic with a little salt.

Put the drained beans in the bowl of a food processor and blend with the garlic, lemon juice, mint and 1 tablespoon of olive oil, season to taste.

Halve the last clove of garlic and spread it on the hot toasted bread slices and pour over the remaining olive oil.

Sprinkle the slices with goat cheese and top with pate.

Sprinkle with lemon zest and black pepper. If using prosciutto, add some chopped pieces on top.
