Required products :

  • 1 cup ricotta tea
  • 1 egg
  • peel of 1 lemon, finely grated
  • 1/2 teaspoon salt
  • 1 pinch of black pepper
  • 4 slices of bread (best leavened bread)
  • 1 tablespoon olive oil

for mushrooms:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 16 mushrooms
  • 1/4 tea cup green onions, finely chopped
  • 1/4 tea cup of marsala wine
  • 1/2 cup chicken broth
  • 2 teaspoons lemon juice
  • 2 tablespoons finely chopped parsley
  • salt and pepper to taste

Method of preparation :

Fry the mushrooms by heating 1 tablespoon of butter and olive oil in a pan. Add the sliced ​​mushrooms and fry until soft and browned - about 5-6 minutes. Add the green onions and stir when it becomes soft (after 2 minutes), add the wine. Reduce the heat and wait for the liquid to reduce. Add the broth and lemon juice, cook until the liquid evaporates. Season with parsley and mix the remaining oil into the mushrooms. They should acquire a light creamy texture of the sauce sticking to them.

Briefly heat the slices in a toaster until lightly tanned but not hard.

Mix the ricotta with all the spices, lemon zest and egg.

Drizzle the slices with a little olive oil and spread the ricotta on top thickly and richly. Bake in an oven preheated to 220 degrees for about 12 minutes, until the mixture is firm, but should not catch a dark crust.

Serve the bruschettas on a plate and put the mushrooms on each one.
