Put 1 1/4 tea cups of water in a small saucepan and, when it boils, add the bulgur. When the liquid boils again, reduce the temperature and cook for 20 minutes, stirring occasionally. When most of the liquid is absorbed and the bulgur is boiled, remove from the heat and strain, set aside.
Meanwhile, put all the other products in a large bowl. Drizzle with olive oil and stir.
Rinse the bulgur with cold water if it is hot, then add it to the other products. Season with salt and pepper and serve immediately. You can refrigerate for up to 4 hours to better combine the flavors.
