How To Cook Bulgur With Spinach, Tomatoes And Caramelized Onions - Recipe

Required products :

  • 2 tablespoons olive oil
  • 1 medium onion head
  • 3 cloves garlic
  • 1 jar of canned tomatoes or the same amount of chopped fresh tomatoes
  • 1 1/3 tea cups chicken or vegetable broth
  • 450 grams of frozen or fresh spinach
  • salt and pepper

For caramelized onions:

  • 2 chopped onions (preferably sweet variety)
  • 2 tablespoons olive oil
  • 1 teaspoon brown sugar
  • 1/4 teaspoon cinnamon
  • juice of 1/4 lemon

a few teaspoons of yogurt to serve


Method of preparation :

First make the caramelized onions. Cut the heads into thin long pieces. Pour them into a pan with olive oil and fry on medium heat, stirring until browned.

 

A minute before removing the pan from the heat, add the brown sugar and cinnamon, sprinkle with lemon juice.

 

 

 

Bulgur 

Finely chop the onion and garlic. Fry them in olive oil for about 3 minutes on low heat (until the onion is transparent). Then pour the tomatoes into the bowl and after another 3 minutes add the bulgur.

 

 

Stir, pour the broth, add salt, pepper and mix well.

Once the liquid boils, reduce the temperature of the hob to a minimum, close the pan with a lid and let the bulgur simmer until ready.

Then you need to add the spinach. If using frozen, defrost it first and drain the liquid. In case you have fresh, put it in a hot pan for a few minutes to "wither".

Mix with bulgur, heat the combination and boil the pan from the heat.

 

Wait 10 minutes before serving. Add extra salt if necessary.

Distribute the dish in suitable plates / bowls and serve with caramelized onions and yogurt.
