Required products :

  • 2 teaspoons flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon high-fat yogurt
  • 1 egg
  • 4 tea cups frying oil
  • peel of 1 lemon for sprinkling

for syrup:

  • 1 teaspoon sugar
  • 1/2 teaspoon water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon cinnamon
  • 1 teaspoon saffron
  • pinch of salt

Method of preparation :

Prepare the syrup by putting the water, sugar, lemon juice, cardamom, cinnamon, saffron and salt in a saucepan. Let it simmer until the sugar crystals dissolve and the sauce begins to thicken slightly to acquire the consistency of a syrup. Remove from the heat and set aside to cool while you prepare the buns.

Knead the dough for the buns - sift the flour with baking soda, baking powder, sugar and salt. In another bowl, beat the egg and yogurt. Transfer the milk mixture to the flour and knead. Leave for 10 minutes.

Heat the fat in a suitable deep pan. Using a tablespoon, scoop out the dough and fry in hot oil until the buns are golden brown.

Remove them on kitchen paper to drain the fat, then arrange on a plate and pour over the already cooled sauce.

Sprinkle with grated lemon zest and serve the buns warm.
