Required products :

  • 200 grams of spinach (chard or kale)
  • 1/3 tea cup olive oil
  • 1 onion, thinly sliced
  • 1/4 teaspoon allspice
  • 1/2 bunch parsley, finely chopped
  • 1/4 bunch dill, chopped
  • 1 1/4 tea cup grated cheese
  • 250 grams of ricotta (cottage cheese)
  • 13 sheets of pastry crust

for spreading:

  • 100 grams of butter
  • 1 egg
  • 100 milliliters of oil
  • 1/3 tea cup of yogurt

Method of preparation :

Fry the onion in olive oil until soft, stirring occasionally. Add the spinach (or chard) and simmer until soft. Season to taste and add herbs and spices.

Transfer to a bowl and cool completely. Then add the shredded cheese and ricotta.

Prepare the products for spreading. Melt the butter and cool. Add the egg, milk and oil to it. Stir and grease a large pan with it.

Cut 10 of the trays so that they are the same size as the tray. Set aside.

Place the three uncut leaves on the bottom of the tray, placing them so that the edges protrude from different sides. Cut off the excess, keeping about 3-4 inches more than the size of the tray with its walls.

Place 4 cut leaves in the base, smearing each with oil.

Spread half of the spinach mixture on the crusts, and place 2 more crusts on them - each smeared. Put the remaining spinach mixture on top and finish with the remaining crusts - again each greased. Towards the center, fold the bottom crusts that protrude from the tray. Bake for 35-40 minutes at 180 degrees, until golden crispy burek crust.
