How To Cook Cabbage Salad With Fennel - Recipe

Required products :

  • 350 grams of white and red cabbage
  • 1 fennel, cleaned of leaves
  • 100 grams of sugar
  • 60 grams of salt
  • 6 stalks of green onions, cut into thin lengths
  • 150 grams of mayonnaise
  • 2 tablespoons white vinegar
  • 4 tablespoons mustard
  • 150 grams of peas with pods cut into strips

Method of preparation :

Using a mandolin or a very sharp knife, cut the cabbage and fennel into thin strips.

Put them in a bowl and add sugar and salt. Leave for 5 minutes.

Transfer the vegetables to a colander and rinse. Spread on a large sheet of kitchen paper to dry. Do not squeeze them, the purpose is only to absorb the water on them, but not to squeeze the water from the vegetables themselves.

Fill a bowl with water and put a few ice cubes. Pour the green onions into it and scatter the bundles with your fingers, then leave for 10 minutes.

Meanwhile, prepare the salad dressing by mixing the mayonnaise, mustard, vinegar and adding a little freshly ground black pepper.

Put the cabbage and fennel in a bowl, add peas and 3/4 of the dressing, stir. Drain the green onions and place on top of the salad. Add the remaining dressing and serve.

You can store up to 3 days.
