For swamps:

90 grams of wheat flour

80 grams of sugar

3 eggs

pinch of salt

1 teaspoon grated lemon peel

For the stuffing:

200 grams of canned pineapple

100 grams of light grapes

30 grams of blackberries

1 banana

1 pear

360 grams of yogurt

10 sheets of gelatin

400 grams of fresh cream

2 pieces of mango

170 grams of sugar

1 paradise apple

20 grams of raspberries

150 grams of fresh strawberries

2 peaches

15 grams of vanilla sugar

1 apple

For decoration:

1 banana

1 kiwi

30 grams of blackberries

20 grams of raspberries

5 grams of jelly for cakes

a few fresh strawberries

1 tablespoon rosehip honey

Method of preparation :

Mix the eggs with the sugar, add a pinch of salt and lemon zest.

Beat the ingredients with the mixer at high speed for about 5 minutes. The mixture will be very light, fluffy and thick.

Sift the flour directly into the egg combination.

Stir with a wire whisk, making movements in a bottom-up direction.

Cover the bottom of a suitable form (24 - 26 cm) with baking paper. Do not smear the walls of the container with anything.

Pour the dough in and place in a preheated 180 degree oven. Bake for about 20 minutes, check the readiness with a toothpick. Remove the marshmallows to cool on a wire rack.

Make the filling. Beat the fresh cream with both types of sugar until they form "hard peaks". If you like sweeter, add more sugar.

Mix the whipped cream with the yoghurt.

Pour cold water over the gelatin and drain after 5 minutes. Put it in a bowl, pour the juice of canned pineapple and place in the oven at 70 degrees. Let it dissolve (this takes about 1-2 minutes).

You have to work very fast to get a gentle jelly. In the hot gelatin immediately add 3-4 tablespoons of cream with yogurt and mix until smooth.

Now is the time to add the jelly to the base cream, pouring it in a thin stream, while at the same time it is necessary to vigorously mix with a wire for beating eggs.

Leave the cream for 10 minutes, during which time prepare the fruit and mix it with the future jelly.

Use a deep bowl with a capacity of 2.5 liters. Cover the bottom and walls tightly with plastic wrap. Pour the chopped fruit.

On them the future jelly and shake the dish on all sides for about a minute to remove the formed air bubbles.

During this time, the marsh has cooled or is slightly warm. Place it on the jelly and press the whole surface by hand, but carefully so that it does not break and the cream does not come out on the side. Cover the future cake with foil and put in the freezer for 30 minutes. Then transfer for another hour - an hour and a half in the refrigerator. It is important that the marshmallow does not stay in the freezer, as gelatin loses its properties when frozen. In the best case, the gentle cream will be with small balls of gelatin.

Turn the hardened tray in a suitable container and remove the foil. Heat the honey and spread it on all the sliced fruits that you have prepared for the decoration, then distribute them on the surface as you see fit.

Pour the remaining honey in the middle of the cake and place the berries on it.

Dissolve the gelatin in water according to the instructions and heat as directed. Spread all the fruit and the whole surface with the hot filling to get a glossy look. Refrigerate for a few minutes.

Enjoy your meal!
