Method of preparation :
Preheat oven to 180 degrees. Line two baking trays with a diameter of 23 cm with baking paper.
Beat the eggs with the sugar until you get a light cream. Add the flour and cocoa and combine.
Spread the dough in both pans and bake for 25-30 minutes until dry.
Cool completely and remove from the pan, peel off the paper.
Drain the cherries from the compote and save the juice. Cut the fruit.
Put the starch in a saucepan and add a little juice to make a slurry. Gradually pour the remaining juice, stirring constantly. Boil until thickened and remove from the heat. Add the sliced fruit inside and refrigerate completely.
Melt both types of chocolate.
Dip half of the cherries in the white chocolate and the other half in the brown. Transfer them to a sheet of paper, arranging them upright to cool in this shape.
From the baking paper, cut several rectangles of the same size (about 7 by 4 cm). Draw a few Christmas trees on them and let them harden.
Whip the cream to soft peaks and set aside a little for decoration.
Cut each loaf into 2 thinner ones.
Divide the cherry mixture into 3 equal parts.
Put on the first sheet of it, cover with a piece of cream. Put the next loaf and in the same way assemble the cake, finishing with the last loaf.
Smear the cake with cream.
Decorate the sides of the cake with chocolate trees, and arrange the cherries on top in the center.
Garnish with cream and refrigerate before serving.
