Necessary products
For the dough:
150 grams butter
100 grams sugar
1 egg yolk
1 teaspoon flour
2 tablespoons cocoa
1 packet baking powder
For the stuffing:
200 grams of coconut shavings
6 egg whites
1 teaspoon sugar
For cream:
200 grams butter
5 egg yolks
1 teaspoon milk
4 tablespoons sugar
2 tablespoons
vanilla cognac
For the glaze:
100 grams of chocolate
50 grams of butter
Method of preparation :
Start by making swamps. Mix the raw yolk with the sugar and melted butter. Add the sifted baking powder and cocoa flour, kneading the dough.
Cover the bottom of a suitable form with parchment and evenly distribute 2/3 of the dough in it, and freeze the rest.
Prepare the filling by beating the egg whites with the sugar, then add the coconut shavings. Apply an even layer on the dough, quickly grate the frozen amount on top.
Bake in the oven at 180 degrees for about an hour and allow the base to cool to room temperature.
Meanwhile, beat the softened cream butter until fluffy. In a separate bowl, heat the yolks with the sugar and milk. Boil the combination until thickened and cool. You should mix with the whipped butter, adding it gradually. Pour a little cognac and add vanilla to taste.
Spread this cream on the top and sides of the cake, put it in the fridge for a few hours or overnight.
When you take out the dessert, cover it with a glaze made from melted chocolate with butter (in a water bath).
