Necessary products
For caramelized walnuts:
300 grams of walnuts
5 tablespoons sugar
1 tablespoon butter
For the marshes:
6 egg whites
12 tablespoons sugar
3 tablespoons flour
1 packet vanilla sugar
1 tablespoon rum
1 tablespoon lemon juice a
pinch of salt
For the cream:
200 milliliters of fresh milk
100 grams of butter
6 egg yolks
6 tablespoons sugar
almond extract
150 milliliters of whipped cream for decoration (maybe chocolate or other of your choice)
Method of preparation :
Caramelize the nuts first. Pour the sugar into the pan and place on the stove. When the sweet crystals melt and acquire a light brown color, add the butter and coarsely ground walnuts.
Stir to cover with caramel. Remove the pan from the heat, let the nuts cool a bit and pour them on a flat surface (for example, a board), which you have covered with aluminum foil.
Once completely cooled and hardened, grind them with a blender and start making the marshmallows.
Beat the egg whites with a pinch of salt and gradually add the regular sugar to them. Then add the vanilla, pour the rum and lemon juice, and finally 200 grams of caramelized nuts and flour.
Mix everything until smooth and distribute the dough in a detachable form, the bottom and walls of which you have covered with parchment.
Bake in a preheated oven for 40-45 minutes (check readiness with a toothpick).
Prepare the cream by mixing the yolks with the sugar in a bowl placed on a water bath. Gradually pour in the milk and stir constantly until the consistency thickens. Then remove from the heat and allow the cream to cool.
Separately beat the butter until foaming and then gradually add the finished cream to it. Finally, add the almond extract.
When you remove the marshmallows from the oven, cut it in two horizontally. Spread them with the milk cream, sprinkle with the remaining caramelized walnuts and stick them together.
Using a pastry syringe, decorate the cake with whipped cream.
Refrigerate for a few hours, then serve.
