Required products :
For the marshes:
170 grams of flour
5 eggs
200 grams of sugar
30 grams of cocoa powder

For syrup:
50 milliliters of orange liqueur
100 grams of sugar
50 milliliters of water
For cream coffee:
1 tablespoon instant coffee
10 grams of gelatin
1 tablespoon water
300 grams of heavy cream
300 grams of powdered sugar
70 milliliters of cognac
juice of 1/2 lemon
For the orange cream:
1/2 teaspoon grated orange peel
125 grams of yogurt with orange flavor
40 milliliters of orange liqueur
200 grams of heavy cream
50 grams of sour cream
10 grams of gelatin
Method of preparation :
The dough. Beat the eggs with the sugar until fluffy. Add the sifted flour, cocoa, cinnamon, vanilla sugar and beat everything. Pour the mixture into a suitable form, the bottom of which you have covered with parchment and bake the marshmallows until ready at 200 degrees.
Then allow to cool and cut horizontally to obtain 3 layers.
Make the syrup by mixing the water and sugar, cook for 3 minutes, then cool, pour the liqueur and stir.
Cream coffee. Dissolve the coffee in hot water, soak the gelatin in water, the amount of which should be 6 times more than it. Then drain the excess liquid, dissolve the gelatin in a water bath and mix with the coffee. Whip the cream, add the sugar, cognac, lemon juice, coffee with gelatin and stir.
Orange cream. Pour gelatin with cold water until it swells and melt in a water bath.
Whip the thick cream, mix it with the sour and yoghurt, add the gelatin, liqueur and orange peel.
Soak the tops with the syrup. Spread one of them with coffee cream, the second - with orange cream and put them on top of each other. Place the third loaf on top and spread the rest of the coffee cream on the surface and sides of the cake. Refrigerate the dessert for about 20 minutes.
Finally, sprinkle with cocoa powder, garnish with coffee beans, anise stars and / or cinnamon stick. Decoration is a matter of choice and taste.
