How To Cook Cake With Pears, Ricotta And Caramel Sauce - Recipe

Necessary products :

For the cake

  • 2 large eggs
  • 260 grams of sifted flour
  • 225 grams of powdered sugar
  • 85 grams of brown sugar
  • 120 milliliters of buttermilk
  • 120 milliliters of walnut oil
  • 2-4 medium-sized ripe pears
  • 55 grams of ground almonds
  • 75 grams of walnuts, chopped
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon freshly grated nutmeg

For the caramel sauce :

  • 200 grams of powdered sugar
  • 120 milliliters of cream
  • 90 grams of salted butter
  • 1 teaspoon salt

For decoration :

  • ricotta cheese

Preparation :

For the cake

  • Preheat the oven to 180 degrees / on a fan /
  • In a deep bowl, mix the flour, ground almonds, chopped walnuts, baking powder, baking soda and spices.

 

  • In a separate bowl, beat the eggs with the icing sugar and brown sugar until thick.
  • Add the buttermilk and walnut oil and mix well to homogenize.
  • Mix all ingredients and stir again.
  • Pour the cake batter into a greased deep pan that you have previously covered with baking paper and flatten with a spoon if necessary.
  • Wash the pears, cut them in half and clean the seeds with a spoon.
  • Spread them on the mixture, letting their tops protrude upwards.

 

  • Bake the cake in a preheated oven for about 55-70 minutes, and in the middle of baking cover it with aluminum foil.

For caramels with:

  • Heat the sugar in a saucepan over medium-high heat. Do not stir until it melts, just shake the pan.
  • When the sugar is completely melted and acquires an amber color, add the butter and stir vigorously.
  • While stirring constantly, pour the cream into the caramel mixture. Stir for about a minute, until you get a smooth sauce.
  • Remove from the heat and add the salt. Stir again.

Serve the cake with ricotta cheese and generously garnished with caramel sauce.
