Required products :
5 eggs (for swamps)
125 grams of sifted flour + 1 teaspoon of leavening agent
30 grams of cocoa powder (sifted, for marshes)
200 grams of sugar (125 grams for marshmallows + 75 for syrup)
200 milliliters of water (for syrup)
peel of 1/2 lemon (for syrup)
1 teaspoon lemon juice (for syrup)
550 grams of white chocolate (for mousse)
700 grams of high-fat cream (500 grams for mousse + 200 grams for ganache cream)
200 grams of dark chocolate
Method of preparation :
Beat the eggs well with the sugar, turn off the mixer, add the sifted cocoa flour and stir with a spatula, scooping from the bottom up.
Transfer the dough to a suitable form with a diameter of 24 cm and bake the marshmallows until ready (check with a toothpick), then wait for it to cool well.
Make a syrup from the water, sugar, lemon juice and zest. Let cool.
Melt the white chocolate in a water bath, stirring. Pour 250 milliliters of cream, stir and remove from heat. The mixture should not be hot.
Whip the remaining cream. Carefully and in small portions add the melted chocolate to it. The mousse is ready, put it in the fridge.
Cut the marsh into 3 parts (you can use thread, having previously made incisions with a knife).
Next is the assembly of the cake.
Put one loaf in a detachable form, syrup and cover with half of the mousse. Put the second loaf, syrup, mousse and finish with the third syrup loaf.
Put the cake in the refrigerator. You can leave it until the next day to decorate it.
Cover with ganache cream, which you can make yourself by melting 200 grams of dark chocolate and mixing it with 200 milliliters of cream.
Decorate as desired. It turns out great with coated hard sugar dough.
