Required products :

  • 1 cauliflower in roses
  • 150 grams of kale (optionally use spinach)
  • 50 grams of butter
  • 50 grams of flour
  • 2 tablespoons mustard powder
  • 500 milliliters of fresh milk
  • 100 grams of grated cheddar cheese
  • 75 grams of grated Manchego cheese
  • 50 grams of grated Parmesan cheese
  • 1 teaspoon wholemeal mustard

Method of preparation :

Blanch the cauliflower for 10 minutes in boiling water, finally add the kale leaves for 2 minutes to soften them as well.

Melt the butter in a pan, fry the flour in it for 1 minute and stir. Add the dry mustard, stir and remove from the heat. Carefully pour the milk, stirring constantly with a wire to obtain a uniform consistency without lumps.

Return to the hob and bring to the boil, stirring constantly. Cook for 2-3 minutes until the sauce begins to thicken, being careful not to burn.

Put 2/3 of the cheddar, half of Manchego and half of the Parmesan in it. Add the coarse mustard and black pepper.

Put the drained cauliflower and kale in the sauce, mix well.

Transfer to a rectangular ceramic pan and sprinkle with the remaining cheeses. Bake for 20 minutes until appetizing golden crust. Serve as a side dish with meat of your choice.
