How To Cook Calzone Pizza With Ham, Mozzarella, Mushrooms And Corn - Recipe

Necessary products

For the dough:

  • 500 grams of flour (+/- 50 grams)
  • 300 milliliters of fresh milk, whey or water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 10 grams of pressed fresh yeast
  • 2 tablespoons olive oil


For the stuffing:

  • 4 tablespoons tomato sauce
  • 4 tablespoons canned corn kernels
  • 200 grams of mushrooms
  • 250 grams of ham
  • 300 grams of mozzarella
  • parsley
  • olive oil


Method of preparation :

The dough

Heat the milk (whey or water) to 40 degrees (the liquid should be slightly warmer to the touch than your body), then put salt, sugar and olive oil in it. Stir to melt the sweet and salty crystals.

In a separate bowl, sift the flour (450 grams, add the remaining 50 later if necessary), add the yeast and grind by hand until fine crumbs are obtained.

Make a "well" with the center of the mixture, pour the liquid combination into it and knead the dough, stirring with a spoon until it becomes thick enough to start kneading with your hands. The dough should be smooth and elastic. Knead it for at least 10 minutes and sprinkle the hob with flour if necessary.

Grease the walls of a bowl, sprinkle with a little flour, put the dough and cover with a damp cloth. Leave for an hour in a warm place to rise. During this time, the dough will increase its volume 2-3 times.


The stuffing

Wash and cut the mushrooms into thin slices, fry them until golden brown in a small amount of olive oil. At the end of cooking, season with salt and pepper, take them out on a plate and leave to cool.

Meanwhile, grate the mozzarella, cut the ham into thin slices, finely chop the parsley (if using).

Divide the already risen dough into four equal parts and form smooth balls from them. Cover them with a clean towel and leave for 10 minutes. Turn the oven to preheat to 220 degrees, and put the tray in which you will bake the pizzas in it.

Then roll out on a sheet of parchment each part, you need 4 round layers, about 4 millimeters thick.

Spread half of each base with tomato sauce, put on it an incomplete handful of grated mozzarella, pieces of ham on top, chilled mushrooms and corn.

Sprinkle generously with mozzarella, add a little chopped parsley and cover with the free part of the dough. Carefully pinch the edges and make a few cross cuts on the surface.

Arrange the pizzas in a hot pan and bake for 10-12 minutes in the oven (until they turn red on all sides).

Remove to a wire rack, wait about 5 minutes for the calzone to cool slightly, and then serve.
