Required products :

  • 1 kg sweet potatoes
  • 1 teaspoon brown sugar
  • 1/4 tea cup butter
  • 1/2 teaspoon water
  • 1 tablespoon salt
  • 1 tablespoon apple cider vinegar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/8 teaspoon ginger

 

Method of preparation :

Cut the sweet potato into circles 1 cm thick.

Arrange the slices in a tray covered with baking paper, side by side, leaving a small space between them. Set aside.

In a saucepan, combine the brown sugar, butter, salt and water. Bring the mixture to a boil (if you have a thermometer, measure 104 degrees), add the apple cider vinegar, ginger, allspice and cinnamon, then pour the resulting mixture over the potatoes to cover all the slices.

Cover the pan with aluminum foil and place in a cold oven. Turn to 120 degrees and let the potatoes bake. Pour the syrup over them every 20 minutes and turn them over. In about 1 hour and 15 minutes they will be ready.

Then remove the foil and continue to bake until caramelized, turning the potatoes from time to time - another 30 minutes.

Allow to cool before serving.
