Cut the peeled onions into circles about 3-4 millimeters thick.
Chop the parsley and add to the onion.
Heat the oil in a pan, pour the tomato juice. If you use a puree, dilute it with a little water. Add salt and sugar, stir and let simmer for 10 minutes.
Add the vinegar and after a minute remove the pan from the heat.
Pour the resulting sauce over the onion and stir.
Distribute the mixture in jars and sterilize for 10 minutes.
