Required products :

  • olive oil or other grease
  • flour for sprinkling
  • 2 and 1/2 cups wholemeal flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon powder
  • 2 cups sweet apples, peeled and cut into cubes
  • 1 and 1/2 cups brown sugar
  • 1 cup buttermilk
  • 1/2 cup olive oil (or coconut oil)
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 3/4 cup dulce de leche (caramel cream) from canned food
  • 2 tablespoons cooking cream

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 180 degrees.

Grease a cake pan with olive oil (or other fat) and sprinkle with flour.

Mix the wholemeal flour, baking soda, salt and cinnamon in a large bowl. Add the diced apples and stir to mix all the ingredients.

In a large bowl, beat the buttermilk, brown sugar, olive oil (or coconut oil), eggs and vanilla until smooth.

Melt in the microwave dulce de leche (caramel cream) for about 30 seconds.

Pour the liquid ingredients (buttermilk mixture) into the dry ingredients (flour mixture) and stir until combined. Pour half of the dough into the prepared cake pan. Put 1/2 cup of the melted dulce de leche on the dough in the mold. Spread the mixture with the tip of a knife or spoon. Keep the rest of the dulce de leche in a bowl. Pour the remaining dough into the tin and bake for about 45 to 50 minutes or until golden brown.

Remove from the oven and allow to cool for 10 minutes, then remove and place on a wire rack to cool completely for about 1 hour.

Mix the cooking cream with the remaining 1/4 cup dulce de leche. Put in the microwave to warm up for 30-45 seconds. Stir to mix well and allow the cream to cool for 5 minutes, then pour it over the cooled cake, cut into pieces and serve.

Enjoy!
