How To Cook Caramel Cake With Cottage Cheese, Cream Cheese And Walnuts - Recipe

Necessary products

For swamps:

  • 150 grams of crumbly caramel biscuits
  • 1/2 cup walnuts
  • 1/2 teaspoon brown sugar
  • 3 tablespoons unsalted butter plus a little to spread
  • maple syrup or whipped cream to serve


For the glaze:

  • 1.5-2 teaspoons of butter (unsalted)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon vanilla sugar

For the stuffing:

  • 600 grams of cottage cheese
  • 120 grams of cream cheese
  • 2 eggs
  • 6 tablespoons of liquid cream with 33-35% fat and 20% fat
  • 1 teaspoon brown sugar
  • 1 tablespoon potato starch (topped)
  • juice of 1/2 lemon

 

Method of preparation :

Mix the crushed biscuits and ground walnuts, add the sugar, melted and slightly cooled butter. Put the resulting dough in a greased round shape with a diameter of 22-24 centimeters, pressing it to the bottom and walls of the dish. Refrigerate for an hour, and in the meantime make the filling.

Pass the curd through a sieve and pour into the bowl of a blender. Add the cream cheese, eggs, high- and low-fat cream, brown sugar, potato starch and pour the juice squeezed from half a lemon.

Beat the ingredients until smooth and pour the cream over the already firm caramel batter.

Bake the dessert (at an oven temperature of 200 degrees) for about 25 minutes. During this time, the filling should remain slightly liquid in the middle.

Wait for the cake to cool to room temperature (about an hour and a half), then place in the refrigerator to cool.

Prepare the glaze.

In a small bowl, mix the butter with the two types of sugar and pour two teaspoons of water. Boil the combination for 1-2 minutes, stirring constantly.

Once it has cooled a bit, pour the cold cake with it.

Serve the dessert with maple syrup and / or whipped cream.
