Preheat oven to 170 degrees.
Grind the crackers until crumbly. Add the melted butter and stir.
In a form with a falling bottom with a diameter of 23 cm, pour the crumbs. Press them on the bottom of the form and put them in the refrigerator to cool.
In a large bowl, mix the cream cheese, 3/4 cup sugar and milk. Beat with a mixer to get a smooth fluffy cream.
Add the sour cream, flour, 2 tablespoons of bourbon and 2 eggs. Beat again with the mixer until all the products are mixed.
Pour the cream over the marshmallows and bake for 1 hour until the cream is firm.
Meanwhile, in a bowl, mix the brown sugar, starch, salt and heat on low heat in a saucepan. Immediately add the maple syrup, cream and egg yolks. Stir to combine the ingredients and allow the sugar to melt on low for about 5-10 minutes.
Remove from the heat and add the cold butter and the last spoonful of alcohol. Wait for it to cool a little more and add the crushed pecans.
Transfer the caramel mixture to the cheesecake and flatten with a spatula.
Garnish with more nuts and refrigerate until completely cooled.
