Required products :

  • 1/4 teaspoon sugar
  • 2 tablespoons water
  • 1/2 teaspoon lemon juice
  • 2/3 tea cup cream
  • 270 grams of chocolate drops
  • 1/2 teaspoon cocoa powder
  • 500 grams of chocolate ganache
  • for topping chopped nuts, caramel, or crushed cocoa

Method of preparation :

Combine water, sugar and lemon juice in a small saucepan. Heat on a hot plate until the crystals melt.

Without stirring, allow the sugar to caramelize on the stove, pushing the separation on the walls of the dish with a wet spatula if necessary. Do not stir to prevent the sauce from crystallizing.

When the caramel sauce is obtained, remove from the heat.

Meanwhile, in a small saucepan, heat the cream, almost to a boil, the moment it begins to form small bubbles at the edges of the dish, remove from heat.

Put the chocolate drops in a fireproof dish.

Return the caramel to the hob to loosen if it has started to harden and add the warm cream, stirring constantly until the two mixtures are combined.

Pour the caramel sauce over the chocolate and leave for 1 minute to melt the drops. Mix well, cover with foil and leave for 2 hours to harden the mixture.

Once this time has passed, form small balls, which you arrange on baking paper and refrigerate for 1-2 hours.

Melt the chocolate ganache and dip the caramel chocolate balls in it with a fork.

Arrange them on paper and sprinkle them with the desired topping while still wet.

Leave them to harden for 15 minutes, then serve at room temperature and store in the refrigerator.
