Mix the sugar and honey in a bowl and put on the fire. Bring to a boil and cook until amber in color (about 7-10 minutes). Start adding the butter in portions at room temperature, then pour in the hot cream. Cook to the required consistency. To assess whether you have reached the desired density, do the following: drop 2 drops of the mixture on a cold surface, let it cool and see if the consistency suits you.
Line a tray or tray with parchment paper that you have greased well (otherwise the candies will stick). Pour the mixture and let it cool, but not completely. While still soft, cut into squares and then allow to cool completely.
