How To Cook Caramel Ice Cream With Vanilla - Recipe

Required products :

  • 1 1/2 tea cups sugar
  • 2 3/4 tea cups liquid cream (35% fat)
  • 2 tablespoons butter
  • 1 1/2 teaspoons fresh milk
  • 1/2 tablespoon vanilla extract


Method of preparation :

In a small saucepan, mix the sugar and 1/2 teaspoon of water. Place on the hob and wait for the combination to boil, stirring constantly.

Let the mixture cook until it acquires an amber color. When this happens, immediately remove the pan from the heat, because the caramel will start to burn.

Carefully pour 1 cup of cream and stir, but keep your hands, because you can easily burn yourself.

Add the butter, mix thoroughly until smooth and uniform in consistency. Then start adding a little of the salt until the desired salinity is reached.

Transfer half of the caramel to a suitable container with an airtight seal and allow to cool to room temperature.

Separately beat the remaining amount with 1 3/4 tea cups of cold cream, milk and vanilla.

Once completely cooled, transfer to a suitable freezer container, pour the caramel at room temperature, close with a lid and freeze.

Before serving, remove the ice cream from the freezer and wait 5 minutes for it to relax.
