Necessary products:

 

for the chocolate glaze

 

  • 225 grams of melted dark chocolate

 

for the caramel mousse

 

  • 120 grams of brown sugar
  • 3 egg whites
  • 50 grams of butter
  • 2 tablespoons liquid confectionery cream

 

for the biscuit base

 

  • 80 grams of butter
  • 70 grams of sugar
  • 1 egg
  • 150 grams of flour
  • pinch of salt
  • 1 tablespoon grated orange peel

 

Method of preparation:

 

Prepare round silicone molds, melt the chocolate and smear the inside with a silicone brush. Cool for half an hour, during which time heat the butter in a saucepan or pan, melt the sugar and pour the cream. Once the mixture is caramelized, remove from the heat and cool.

Beat the egg whites on hard snow and combine them with the caramel. Stir until the products are mixed and distribute the cream in the silicone molds. Cool for half an hour. Meanwhile, preheat the oven to 190 degrees and mix the flour, salt and orange peel in a bowl. Beat the butter, egg and sugar and combine the two mixtures.
