Method of preparation :
Grease a large rectangular pan with oil and place a sheet of baking paper on top, then grease it and flour it.
In a bowl, mix the flour with the leavening agents and spices.
Beat the eggs and granulated sugar with a foam mixer for about 5 minutes. Reduce the speed of the mixer and add the grated carrot and carefully pour the flour. Pour the mixture into the pan and flatten, then bake at 190 degrees for 15 minutes (let the oven preheat).
When the marshmallow is ready, sprinkle with 1/4 teaspoon of powdered sugar a clean cloth (this will prevent the marshmallow from sticking to the textile). After removing the marshmallows from the oven, immediately transfer it to the towel, remove the parchment paper and roll it lengthwise with the help of the towel. Allow this form to cool completely.
Combine grated carrot, sugar and half a glass of water in a saucepan. Bring to a boil over medium heat, stirring occasionally, until the mixture is caramelized - for about 12 minutes.
Remove from the heat and transfer to a plate using a slotted spoon.
For the glaze, mix the cream cheese with the butter and salt, beating for about 3 minutes until a homogeneous mixture is obtained. Reduce speed and add sugar and vanilla. After another 2 minutes, add the milk to make a nice cream. Finish with a final stir for another 4 minutes. Separate 1/2 tea cup from the glaze.
Assemble the roll - carefully unroll and remove from the towel and spread with half of the glaze, sprinkle with walnuts, both types of raisins and caramelized carrots. Roll up and spread with the remaining glaze, then sprinkle with coconut.
Color the separated glaze in orange and form small carrots for decoration. Use small sprigs of parsley to make petals.
