Wipe the mushrooms with a damp cloth, do not wash them. Cut them horizontally into pieces 1 cm thick and make a shallow cross-section on the surface on each.
Finely chop the feathers, mix the liquid ingredients (honey, soy sauce, wine and sesame oil).
Put the mushroom pieces in a row in a cold pan, pour the sauce over them and leave to marinate for 15 minutes, turning them periodically.
Then place the pan on the stove, turn it on at low temperature and let the mushrooms fry (turn them often) until the sauce caramelizes and thickens.
Serve sprinkled with sesame seeds and green onions.
