How To Cook Caramelized Potatoes With Dried Tomatoes, Garlic And Thyme - Recipe

Required products :

1 kg of potatoes
3 cloves garlic
1 onion
100 milliliters of olive oil
200 grams of dried tomatoes in butter
2 sprigs of thyme
150 grams of sugar
salt to taste

 

Method of preparation :

Preheat the oven to 180 degrees.

Peel the potatoes, cut them lengthwise into two pieces and arrange in a pan (greased with olive oil) with the cut side down.
Sprinkle with olive oil, add salt and bake for about 30 minutes.

Peel onions and garlic, cut them into small cubes and fry in 3 tablespoons of olive oil. Add the baked potato halves and let them fry for 8 minutes.

Remove the sun-dried tomatoes from the fat, dry them and cut them into thin strips. Finely chop the thyme. Put the two products in the pan with the others and fry everything for 5 minutes.

Make syrup. Pour 5 tablespoons of water over the sugar and cook until the sweet crystals are completely dissolved. The liquid should acquire a golden color. When this happens, pour it over the potatoes, sprinkle with thyme and remove from the heat.

The dish is ready.
