Required products :

for the base:

  • 9 graham crackers
  • 6 tablespoons melted butter
  • 1/4 teaspoon sugar
  • pinch of salt

for the filling:

  • 4 sachets of cream cheese at room temperature
  • 1 teaspoon sugar
  • 3 large eggs
  • 2 egg yolks
  • 2 teaspoons vanilla
  • 1/4 tea cup sour cream
  • 2 tablespoons flour
  • 1/4 teaspoon salt

for topping:

  • 1/3 tea cup crystal sugar for sprinkling

Method of preparation :

Prepare a tray with detachable walls by smearing it.

In a bowl, mix the ground crackers with the butter and sugar. Stir and transfer to the prepared pan. Press well on the bottom.

Using a mixer, beat the cream cheese and sugar. Add the eggs, vanilla and sour cream. When you get the cream, add the flour and salt and stir for the last time to combine.

Pour the cream over the cookie sheet.

Wrap the bottom of the pan with aluminum foil and bake in a water bath, the water should reach half of the pan in which the cheesecake is.

Bake for 1 hour and 30 minutes until the cream is ready (when shaking, it should not spill). When it is ready, turn off the oven and open its door, leave the cheesecake to cool in the oven for 1 hour.

Remove the foil and refrigerate for 5 hours or 1 night.

When serving, sprinkle with granulated sugar and caramelize with a burner.
