Method of preparation :
Heat the olive oil in a pan and fry all the ingredients (excluding the cooked rice and coriander) for 5 minutes or until the peppers are soft, stirring occasionally. Add the black beans and cook for another 5 minutes or until done. Serve the dish with a garnish of boiled rice and garnish with fresh coriander.
