How To Cook Caribbean Black Beans With Rice And Mango - Recipe

Learn how to cook "Caribbean black beans with rice and mango". Delicious recipe.

Required products :

  • 2 cans of black beans, drained and rinsed
  • 2 teaspoons olive oil
  • 1 papaya, peeled, cleaned and diced
  • 1 red pepper, chopped
  • 1 red onion, chopped
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2 tablespoons fresh coriander, chopped
  • 1/2 teaspoon paprika (or hot pepper)
  • 2 cloves garlic, chopped
  • 5 cups boiled rice (warm)

* A tea cup is used to measure the quantities.

Method of preparation :

Heat the olive oil in a pan and fry all the ingredients (excluding the cooked rice and coriander) for 5 minutes or until the peppers are soft, stirring occasionally. Add the black beans and cook for another 5 minutes or until done. Serve the dish with a garnish of boiled rice and garnish with fresh coriander.
