The tender and slightly sweetened wholemeal muffins have a special taste, thanks to the garam masala. If you do not have or cannot find this spice, you can replace it with cinnamon.

Required products :

  • 2 medium-sized carrots, grated
  • 1 medium apple, peeled and grated
  • 1/2 cup brown sugar
  • 170 grams of wholemeal flour
  • 1 and 1/2 teaspoons baking powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 3/4 cup full buttermilk
  • 3 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 and 1/2 teaspoons orange peel
  • 1 tablespoon orange juice
  • 1/2 cup roasted pecans (or walnuts), crushed
  • 1/2 cup powdered sugar

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 190 degrees. Put paper muffin capsules in 12 rubber molds.

In a bowl, mix the grated carrots and apple together with the brown sugar. Set aside for 10 minutes.

Mix the flour, baking powder, garam masala , salt and baking soda in a large bowl .

Add the buttermilk, olive oil, vanilla extract, egg and 1 tablespoon of orange peel to the carrot mixture. Stir and pour into the bowl with the flour. Add the pecans (or walnuts) and mix well.

Spread the mixture evenly in the muffin tins and bake in the preheated oven for 18-20 minutes or until done.

In a bowl, mix the powdered sugar, orange juice and 1/2 teaspoon of orange peel. Serve the muffins, garnished with orange glaze. Optionally, serve with a glass of warm milk, tea or coffee.
