Required products :

For muffins :

  • 2 large eggs
  • 50 grams of oatmeal
  • 190 grams of rice flour
  • 160 grams of grated carrots
  • 75 grams of grated apples
  • 50 grams of walnuts
  • 30 grams of coconut oil, melted
  • 70 grams of yogurt
  • 75 milliliters of almond milk / or other vegetable milk /
  • 1 large banana, mashed
  • 5 teaspoons honey
  • 60 milliliters of olive oil
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

For sprinkling :

  • 1 handful of oatmeal, ground
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut oil
  • 1 tablespoon sugar
  • 2-3 tablespoons of honey

Method of preparation :

In a large bowl, combine the oatmeal, flour, baking powder, salt, cinnamon and walnuts.

In a separate bowl, beat the eggs with the coconut oil, olive oil, yogurt and almond milk.

Add the banana and honey puree and mix well.

Add the grated carrots and apples and stir again.

Mix the ingredients from the two bowls and use a wooden spoon to homogenize them.

Grease the muffin pan and place one tablespoon in the tins.

Melt the coconut oil and honey for sprinkling over a low heat, then mix them with the ground oats, cinnamon and sugar.

Mix the ingredients until a crumbly mixture and sprinkle each muffin.

Bake until golden brown in a preheated oven to 200 degrees (or 180 degrees if baking with a fan) for about 15 minutes.
