Required products :
400 grams of carrots
50 milliliters of olive oil
50 milliliters of white wine vinegar
200 grams of large green olives
100 grams of black olives
1 teaspoon oregano
4 cloves garlic a
few sprigs of parsley
salt to taste
Method of preparation :
Wash the carrots and, without peeling them, put them in a saucepan. Fill them with enough water to cover them.
Boil them over medium heat for 15 minutes. When piercing them with a fork, they should be slightly firm. Then remove from the water, let cool, peel them and cut into large pieces or circles. Pour them into the salad bowl and season with olive oil and vinegar. Stir thoroughly. Then add the crushed garlic, oregano, chopped fresh parsley and olives.
Add salt to taste and mix everything again.
