Required products :

for biscuits:

  • 1 teaspoon softened margarine
  • 1 teaspoon sugar
  • 1/2 teaspoon brown sugar
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract
  • 3 teaspoons flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons grated carrot
  • 2/3 tea cup crushed roasted walnuts
  • 1/2 cup dried cranberries

for cream:

  • 1/2 cup soft butter
  • 120 grams of cream cheese
  • 2 teaspoons powdered sugar - sifted
  • 1 teaspoon vanilla (liquid)

Method of preparation :

Mix the margarine with the crystal and brown sugar and beat with a mixer until the mixture is soft and crispy. Add the egg and vanilla and combine again.

In another bowl, mix the flour, cinnamon, leavening agents and spices. Add the carrots, walnuts and blueberries.

From both mixtures make a dough from which to form small balls.

Put them in a tray lined with paper and press them lightly to make flat meatballs.

Bake for 10-12 minutes, then cool for another 5 minutes in the pan. Transfer to a cold surface until completely cooled.

Using a mixer, beat the cream cheese, butter, powdered sugar and vanilla until you learn a gentle light cream.

Put some of the resulting cream on each cookie.
