Required products :
- 1 1/2 tablespoons coconut oil
- 1 tablespoon honey
- 1 large egg
- 1 1/2 tablespoons almond flour
- 1 1/2 tablespoons coconut flour
- 2 tablespoons grated carrot
- 1 handful of walnuts, finely chopped
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
For the glaze :
- 1 tablespoon cream cheese
- 2 tablespoons honey
- 1/4 teaspoon vanilla extract
Method of preparation :
- Put the coconut oil in a large glass and melt it in the microwave for about 10-15 seconds.
- Add honey and egg and stir with a fork.
- Add the almond and coconut flour, carrots, walnuts, cinnamon and baking powder. Stir well.
- Heat on high in the microwave for about 2 minutes.
- Allow the carrot cake to cool, during which time make the icing.
- In a small bowl, mix the cream cheese, honey and vanilla extract.
- Garnish and serve.
