Required products :

  • 1 1/2 tablespoons coconut oil
  • 1 tablespoon honey
  • 1 large egg
  • 1 1/2 tablespoons almond flour
  • 1 1/2 tablespoons coconut flour
  • 2 tablespoons grated carrot
  • 1 handful of walnuts, finely chopped
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder

For the glaze :

  • 1 tablespoon cream cheese
  • 2 tablespoons honey
  • 1/4 teaspoon vanilla extract

Method of preparation :

  • Put the coconut oil in a large glass and melt it in the microwave for about 10-15 seconds.
  • Add honey and egg and stir with a fork.
  • Add the almond and coconut flour, carrots, walnuts, cinnamon and baking powder. Stir well.
  • Heat on high in the microwave for about 2 minutes.
  • Allow the carrot cake to cool, during which time make the icing.
  • In a small bowl, mix the cream cheese, honey and vanilla extract.
  • Garnish and serve.
