This sweet and shaped like a carrot cake is a very good trick to get your kids to eat carrots. Serve with graham crackers, vanilla waffles, ginger or apple slices for more variety and sweetness. It will be even more fun and interesting for the children if you prepare the cake together.

Required products :

  • 200 grams of low-fat cream cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 and 1/4 cups grated carrots
  • 1/2 cup pineapple, diced
  • 1/4 cup golden raisins
  • 1/4 cup toasted pecans (or walnuts), crushed
  • 1/4 cup coconut shavings
  • green carrot leaves for garnish

* A tea cup is used to measure the quantities.

Method of preparation:

In a medium bowl, whisk together the cream cheese, honey, vanilla, cinnamon and salt until creamy. Add 1 cup grated carrots, pineapple and raisins and stir to mix the ingredients well.

Coat the plate in which you will serve the cake with coconut oil or other fat. Pour the mixture and shape into a carrot shape
with the help of stretch film. Wrap in foil and refrigerate for at least 1 hour (maximum 2 days).

Just before serving, mix in a small bowl the pecans, coconut shavings and the remaining 1/4 cup carrots. Remove the cake from the
refrigerator and garnish with the pecan mixture. If desired, you can decorate with green carrot leaves.
