Necessary products:

For cream:

100 grams of butter

2 tsp orange peel

2 tsp lemon or lime peel

2 tsp powdered sugar

2 tsp vanilla extract

1/8 tsp Sol

200 grams of cream cheese 

 

For the swamps

1 3/4 tsp flour

3 large eggs

4 medium carrots (grated)

1 tsp vanilla extract

1/4 tsp Sol

1 tsp white sugar

1/4 tsp brown sugar

1 tbsp orange peel

1 tsp lemon peel

3/4 tsp coconut oil (or other unscented)

1 1/2 tsp ginger

1 tsp cinnamon

2 tsp baking powder

walnuts for decoration 

 

Method of preparation:

Preheat oven to 175 degrees. Line a baking tray (measuring 45x33 cm) with baking paper. In a bowl, mix the flour, baking powder, ginger, cinnamon and salt. In another bowl, mix the sugar and crust. Add the brown sugar, butter, eggs and vanilla extract. Gradually add the carrots. Combine with the flour mixture and stir. Pour the dough into the pan and bake for 15-18 minutes. Wait for it to cool and cut into 3 parts.

Make a cream by beating the butter with the sugar (3 minutes), add the citrus peel and stir. Gradually add the cream cheese and stir until smooth.

Spread cream on each of the tops, arrange them on top of each other, spread cream on the outside of the whole cake and decorate with walnuts (or other nuts).

Put in the fridge for a while, then you are ready to serve.
