Necessary products:

medium carrots - 4 pieces

flour - 1.5 teaspoons

eggs - 3 pieces

oil - 3/4 tea cup

baking powder - 1.5 teaspoons

soda - 1/2 teaspoon

cinnamon - 1 teaspoon

ginger (ground) - 1/2 teaspoon

nutmeg - 1/4 teaspoon

brown sugar - 1 cup

vanilla extract - 1 teaspoon

salt - 3/4 teaspoon

powdered sugar for sprinkling

Method of preparation:

Grate 4 medium carrots on a coarse grater. Mix the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg. Beat the butter, eggs and sugar with a mixer (at high speed). In this mixture, pour the grated carrots, vanilla extract, oil and beat until smooth. Then gradually add the flour and spices to it, beating with a mixer (slowly) until a dough is obtained.

Line a suitable baking dish with baking paper (or muffin tins) and spread the dough evenly over it. Bake in a preheated 190 degree oven for about 20 - 25 minutes. Wait for the finished cake to cool before serving, sprinkle with powdered sugar.
