Required products :

For biscuits:

  • 250 grams of flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 150 grams of brown sugar
  • 50 grams of walnuts
  • 220 grams of canned pineapple (fruit strained and sliced)
  • 1 handful of raisins
  • 2 ripe bananas, smeared
  • 1 passion fruit (inside only)
  • 150 grams of grated carrots
  • 150 milliliters of corn oil
  • 3 eggs

For the glaze:

  • 125 grams of soft butter
  • 225 grams of cream cheese
  • 450 grams of powdered sugar
  • 1 teaspoon vanilla extract
  • 100 grams of coconut cream
  • 50 grams of crushed pecans for decoration

Method of preparation :

Preheat oven to 160 degrees.

Sift the flour, baking powder, salt and baking soda into a bowl and mix well.

Add the sugar, walnuts, pineapple, raisins, banana puree, passion fruit puree and grated carrot. Add the oil and eggs and mix well to combine completely.

Pour the cake mixture into a tray with a falling bottom with a diameter of 22 cm and bake for 1 - 1 1/4 hours until dry (if during baking you feel that the cake burns on top, cover it with foil).

Allow to cool.

To prepare the glaze, beat the butter and cream cheese until smooth.

Add the sugar and vanilla extract and stir again. Next is the coconut, stir.

Once the cake is completely cooled, remove it from the mold and apply the icing.

Garnish with a few crushed pecans and serve.
