Required products :

  • 2 teaspoons flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger powder
  • 1 teaspoon ground nutmeg
  • 3/4 tea cup melted butter, unsalted
  • 1 teaspoon brown sugar
  • 1/2 teaspoon sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 large yolk
  • 1 1/2 teaspoons carrots, finely grated
  • 1 1/2 tea cups white chocolate chips
  • 1/2 teaspoon coconut shavings, sweetened
  • 1/2 cup chopped walnuts

Method of preparation :

  • In a bowl, mix the flour, baking soda, salt, cinnamon, ginger and nutmeg. Stir and set aside.
  • In a medium bowl, beat the butter with the brown and white sugar for about 2-3 minutes.
  • Add the egg and egg yolk one at a time, beating after each.
  • Add the vanilla extract and turn the mixer back on until smooth.
  • Add the carrots and stir with a wooden spoon.
  • Add the dry ingredients in two parts. Stir.
  • Add the chocolate chips, coconut and chopped walnuts and stir again to distribute evenly.
  • Cover the bowl and cool the mixture for 1 hour.
  • Preheat oven to 160 degrees and cover pan with parchment paper.
  • Use about 3-4 tablespoons of the mixture to shape the carrot cookies at a distance of 4-5 inches from each other.
  • Bake for 16-18 minutes until golden brown.
  • Allow them to cool slightly in the pan before removing them on a wire rack to cool completely.
  • Serve the carrot cookies and enjoy.
