Required products :

  • 1 teaspoon crystal sugar
  • 1 teaspoon flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon oil
  • 1/2 cup condensed milk
  • 2 eggs, broken
  • 1 teaspoon vanilla bean paste
  • 1 cup grated carrot
  • 1/2 cup sliced ​​canned pineapple, drained
  • 1/2 cup crushed walnuts
  • 125 grams of butter
  • 1 3/4 tea cup powdered sugar
  • 2 teaspoons vanilla paste
  • 250 grams of cream cheese at room temperature
  • 1/2 cup caramel sauce
  • 1/3 cup crushed pecans

Method of preparation :

Turn on the oven to preheat to 180 degrees while you prepare the cupcakes.

Line 2 muffin trays (20 cups) with paper.

Mix the sugar, flour, baking soda and cinnamon. Make a well in the middle and put the oil, condensed milk, eggs and vanilla paste (1 teaspoon) and mix well. Add carrot, pineapple and nuts and combine. Distribute the mixture between the 20 molds and bake for 20 minutes. Cool.

Meanwhile, make the glaze: with a mixer beat the butter, powdered sugar, 2 teaspoons of vanilla paste until a creamy mixture. Add the cream cheese and stir for another 2 minutes. Transfer the mixture to a pouch with a nozzle of your choice.

Garnish the cold cupcakes and pour over the caramel sauce and sprinkle with crushed pecans.
