Required products :

  • 1 1/2 teaspoons flour
  • 1 teaspoon sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 teaspoon oil
  • 2 eggs, broken
  • 1 1/2 teaspoons grated carrots
  • 1/2 cup raisins
  • 1/2 cup crushed walnuts or pecans

for whose particular:

  • 400 grams of cream cheese at room temperature
  • 3/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons flour
  • 1/2 tablespoon vanilla
  • 2 eggs
  • 1/2 cup sour cream

for cream:

  • 1 teaspoon powdered sugar
  • 4 tablespoons soft butter
  • 120 grams of cream cheese
  • 1/2 teaspoon vanilla
  • walnuts or pecans (crushed) for garnish

Method of preparation :

Preheat the oven to 175 degrees and grease an 18-centimeter-diameter pan (use one with detachable walls).

Prepare the carrot mixture: in a large bowl, combine the flour, sugar, cinnamon, salt and baking soda. Add the oil, then the eggs and stir. Finally, add the grated carrots, raisins, nuts and mix.

For the cheesecake with a mixer, beat the cream cheese and sugar to obtain a smooth mixture, then add the flour and salt.

Mix the eggs and vanilla and add them to the mixture, and finally add the sour cream.

Assemble the cake by placing 2/3 of the carrot mixture on the bottom of the pan, then pour 1/3 of the cheesecake and pour the rest of the carrot mixture on top. You should also pour the rest of the cheesecake mixture. Smooth with a spatula and bake for about 1 hour until the center of the cheesecake is firm.

Cool for 1 hour, then cool completely in the refrigerator.

Run a knife along the edges of the cake to free it from the pan and remove it.

For the cream, beat the products and spread the dessert. Sprinkle with nuts.

Store cheesecake with carrots in the refrigerator, and to keep the glaze soft, cover with foil.
