How To Cook Carrot Cream Soup With Celery, Lemon Juice And Ginger - Recipe

Required products :

  • 500 grams of carrots
  • 150 grams of celery
  • 1 tablespoon grated ginger root
  • salt and spices to taste (asafetida, cumin, hot red pepper)
  • 1 tablespoon lemon juice
  • olive oil

 

Method of preparation :

Cut the carrots into small pieces and sauté in olive oil over medium heat under a lid.

Chop the celery and add it to the carrots. When the vegetables are almost ready, add the grated ginger, spices of your choice and add salt to taste.

Stew everything for 5 minutes and pour a cup of boiling water (or vegetable broth). Leave the mixture on the hob until the products are fully cooked, which can even be boiled. Then pour another glass and a half of boiling water.

Then puree using a blender. If the soup is too thick, dilute with more water.

Return to the pan and bring to a boil again. Season with lemon juice and add salt if necessary.

Serve hot in deep bowls.
