Necessary products:

250 grams of carrots

200 milliliters of cream

200 milliliters of water (or broth)

2 - 3 cloves of garlic

1/2 or 1 onion

0.25 - 0.5 teaspoon of salt

0.25 teaspoon black pepper

2 centimeters of ginger

30 grams of butter

2 tablespoons olive oil


Method of preparation:

Peel the garlic cloves and crush them finely, peel the onion, wash and cut, cut the carrots into thin circles. Melt the butter and add the olive oil. Then pour the garlic and fry on low heat for 2 minutes. Followed by onions and 3-4 minutes of frying. It's time for the carrots, add them and fry, stirring for about 5-7 minutes (until they change color).

Finely chop the ginger, add it to the carrots and season with salt and pepper. Pour the water (or broth), close the container with a lid and let everything simmer until soft (about 30 - 40 minutes). Drain the broth and grind / mash the vegetables. Carefully start pouring the liquid in again, without stopping to break. Gradually pour the cream, stir gently and heat the cream soup over low heat. Serve sprinkled with chopped parsley and croutons.
